The pepper plant is a vine growing on forest trees or supporting trees. Its broad shiny green leaves are alternately arranged. The small flowers are in dense slender spikes of about 50 blossoms each. The fresh green peppercorns are harvested by hand and blanched in hot water for 10 minutes until it becomes dark green and then sun dried. Red, white or black pepper origins from the same plant. Our farmers are mainly on the island of Zanzibar and Tanga.

Cinnamon is an evergreen tree characterized by oval-shaped leaves, thick bark, and berry fruit. The branches are harvested manually with a machete. After harvesting, the cinnamon needs to be procced immediately while the bark is still wet. The cut branches are processed by scraping off the outer bark before the cinnamon layer is separated from the wooden core of the branch. After that, we prepare either small chips or hand-roll the bark into beautiful quills. Our farmers are mainly on the island of Zanzibar and Tanga.
